Blue Chip Vegetarian Nachos

The trick to keeping this low sodium is reviewing the labels of all your ingredients.  This takes about 5 minutes to prepare and only 2 minutes to cook and works as a meal for one or snack/appetizer for two. 

2 Handfuls Nature's Promise Organic Blue Tortilla Chips (or other low sodium tortilla chips)
1/4 cup Onion diced
1/2 cup fresh tomato, diced
1/4 cup Old El Paso Hot Sauce (or mild/medium depending on your taste)
1/2 can Low salt or sodium free kidney beans (light or dark) mashed
2 Jalapeno peppers sliced and de-seeded
Dolop sour cream

Small handful of low sodium shredded cheese (mozzarella works well)

Place the tortilla chips in a microwave safe bowl (large pasta bowls work well.)

Spread the mashed kidney beans on top.  Next, sprinkle on the tomatoes, onions and jalapeno peppers. 

Pour on the hot sauce and then top with the cheese.  Mozzarella is typically not associated with nachos, but it is usually about the lowest in sodium and it actually works well with the blue chips.

Microwave on high for two minutes.  Serve with sour cream.

Sodium: 250 - 300 per serving.
