 No Yolks Egg Noodles I'm a big fan of the egg noodle. They're great for casseroles and perfect to pair with Swedish Meatballs. If you check the nutritional label though, you'll find that while pasts generally is low to no sodium, egg noodles can be quite high. After scanning the labels on multiple bags, I came across the No Yolk Dumplings egg noodle by Strom Products. At only 30mg of sodium, the Dumplings version of their product line is the lowest in sodium.There are other versions as well, smaller noodles, larger noodles, flatter noodles, but all have a higher sodium content. Not only is the Dumplings version the lowest (a medium-sized perfectly twisted egg noodle,) the noodles are also cholesterol-free made with egg whites only. It's a two-fer! As far as the quality of the noodle, I'm completely satisfied. It cooks quickly and works great in baked casseroles. Check out the Grilled Salmon Casserole as an idea.

 Woodstock Farms Peanut Butter It's generally easy enough to find a peanut butter that is low enough in sodium. Peanut Butter is also one of those products that has multiple options on the shelves and you can always find a good deal.Along comes Woodstock Farms Organic Smooth/Unsalted Peanut Butter that has 0mg of sodium and a hefty but not-too-hefty price tag of $5.99. Found in my grocer's organic section, this peanut butter has a crunchy version available as well. Smooth indeed! This is the kind of peanut butter that sticks to the roof of your mouth and gets in your teeth but you don't want it to go away. It has a mild flavoring definitely influenced by the absence of salt and the appearance of crushed peanuts - not like the name brands with their singular orange coloring. This one looks organic and tastes great. I love Woodstock Farms Organic Smooth/Unsalted Peanut Butter in a traditional peanut butter and jelly sandwich. If you use a 0mg sodium jelly and pair with low sodium bread, you can potentially get away with a light lunch for less than 400 mg of sodium.

Potatoes and truffles are a match made in Heaven. Truffles are expensive though and difficult to come by. In lieu of actual shaved black truffle, we use truffle oil for this recipe instead. It still imparts that great earthy flavor at a pauper's price.
6 - 8 Yukon Gold Potatoes, chopped in chunks 3 - 5 Cloves garlic, minced 2 Tbsp Black truffle oil 1/2 Tsp Black pepper

The truffle oil gives this salmon an earthy flavor making it perfect to serve along with a mushroom risotto or Grilled Truffle Potatoes. Will stand up to a red wine as well such as a French Syrah.
1 lb Coho Salmon 2 Tbsp Black truffle oil 2 Tbsp Chopped fresh Basil leaves 1/2 Tsp Black pepper
