For a sugar-free product I was surprised with how good this strawberry preserve tasted.  I enjoyed it spread on a cinnamon raisin English muffin. A perfect quick and easy breakfast!

Rockfish Poached in White Wine

This is a very elegant tasting dish and one I first created after fishing on the Chesapeake Bay a few years ago.  I brought home my catch and discovered multiple ways of cooking this versatile and fresh-flavored fish.  Here is one of my favorites:

1 Filet rockfish per person
Slices of 1/2 orange per filet
1/4 tsp celery seed or sodium-free salt alternative per filet
1 tbsp Fresh chopped cilantro per filet
1 cup Sauvignon Blanc or other dry white wine per filet
1 - 2 tbsp peanut oil

You are going to love this one!  It's not fishy at all and the saffron gives it an exotic look, especially with the grill marks.  The taste, even better!  This is a marinade, so prep the night before or at least 4 - 6 hours before you grill.

4 Tilapia filet (fresh)
1 Lemon sliced into 1/4 inch slices
1/4 Cup Calypso Key Lime Marinade or other low sodium lime marinade
1/2 tsp celery seed or sodium-free salt alternative per filet

Fresh Whole Trout Ready for Prep
I love to pick up fresh trout from local fish monger or at a really good grocer.  You can use brown or rainbow trout - both are equally delicious!  This can actually be baked as well but for this version I like to throw it on the grill in a fish basket.  It's really good if you can throw in a couple bricks of fresh mesquite in your grill as well for that extra summery, smokey flavor.
