The key to keeping this a low sodium sandwich is to use the lowest sodium barbecue sauce and sandwich rolls you can find. You could also make your own sandwich rolls ensuring lower sodium.

6 Skinless bonelss chicken thighs
1/2 Bottle low sodium barbecue sauce
4 - 6 Sandwich rolls

Place the chicken into a peak boil and then reduce the heat to medium. Boil the chicken for 20 minutes or until beginning to fall apart.

Drain the water from the pot and pull the chicken apart into small pieces.

Place the chicken pieces into a baking dish and add the barbecue sauce. Mix the chicken and barbecue sauce until chicken is thoroughly coated.

Bake at 400 degrees for 15 minutes.

Spoon the chicken onto each sandwich roll.

Serves 4 - 6
