The key to keeping this a low sodium sandwich is to use the lowest sodium barbecue sauce and sandwich rolls you can find. You could also make your own sandwich rolls ensuring lower sodium.

6 Skinless bonelss chicken thighs
1/2 Bottle low sodium barbecue sauce
4 - 6 Sandwich rolls

Tomato Cucumber Sandwich
This is a small sandwich perfect for a light brunch or serving to guests during afternoon tea.

Dill Wheat Roll
3 - 4 Thin slices of cucumber
2 Slices tomato
1 Slice Panquehue cheese
1 Tbsp Horseradish & Miracle Whip Dipping Sauce

Slice the Dill Wheat Roll to form a bun. Spread the Horseradish & Miracle Whip Dipping Sauce on each piece.

Layer the cucumbers, tomatoes and then Panquehue cheese on the bottom bun. Top with the second bun.

This is a really savory version of the classic fried green tomato sandwich and sure to satisfy the boldest hunger.It will melt right in your mouth!

You can serve this on sandwich bread but I prefer a roll such as a Kaiser roll.  As always, I end up with the bread that's the lowest in sodium.  When selecting your tomatoes, make sure they are completely green and not yet turning any shade of red, even if only slight.  For green tomatoes to fry well, they have to be very firm and if they are at the point of even beginning to ripen they will be too soft on the inside.
