Raspberry Merlot Vinaigrette
For those of us that are on low sodium diets, finding a salad dressing that is low in sodium can be a challenge. Fortunately, every once ina while an option comes along that beats the standard home-made olive oil and balsamic vinegar in the falavor department without adding too much salt to the salad.

At only 50mg sodium per serving, Bolthouse Farms Olive Oil Vinaigrette in Raspberry Merlot flavoring is the perfect option for the impromptu green salad. With the aide of the husband, we whipped up a simple Seared Tuna Greens Salad in no time.

And for those of us also interested in keeping the fat content low, this dressing is a super-tasty 0.5g in the fat column. Enjoy!

Is it cousous? Is it pasta? I know one thing - this stuff is great!

I discovered the product when trying a recipe out of the June 2009 issue of Gourmet magazine (Shrimp and Pearls which, by the way, was awesome.)

The package recommends adding sea salt when cooking but naturally I didn't do that and instead cooked in a low sodium vegetable bouillon instead.

It's quick to cook just like any pasta and as the husband proclaimed: "It's fun to eat!" Yes darling, it is fun to eat.

No Yolks Egg Noodles
I'm a big fan of the egg noodle. They're great for casseroles and perfect to pair with Swedish Meatballs. If you check the nutritional label though, you'll find that while pasts generally is low to no sodium, egg noodles can be quite high. After scanning the labels on multiple bags, I came across the No Yolk Dumplings egg noodle by Strom Products. At only 30mg of sodium, the Dumplings version of their product line is the lowest in sodium.

There are other versions as well, smaller noodles, larger noodles, flatter noodles, but all have a higher sodium content. Not only is the Dumplings version the lowest (a medium-sized perfectly twisted egg noodle,) the noodles are also cholesterol-free made with egg whites only. It's a two-fer!

As far as the quality of the noodle, I'm completely satisfied. It cooks quickly and works great in baked casseroles. Check out the Grilled Salmon Casserole as an idea.
